raspberry filled cupcakes

Jeff's birthday is today so I decided to use that as an excuse to bake something for him to bring to work. I dont tolerate gluten very well but enjoy baking very much. Jeff's favorite fruit is raspberry and he likes them on EVERYTHING - pies, cakes, cookies, jam,etc.

I used Billy's very vanilla cupcake recipe (recommended by martha stewart on her website) but added my twist by filling them with raspberry curd ( from scratch --using frozen raspberries and cornstarch). Anyway, just had one today. Thought they turned out pretty good -- the cake itself was moist but rich. I'm not fond of raspberries but thought it tasted pretty good. i think next time i'd use vanilla frosting instead of cream cheese.
